"We have a microbiologist on board, who checks the quality of air, water and food. They take swabs from hands to check personal hygiene," said executive chef Praveen Anand. The hotel has colour-coded boards for vegetables and meat. "We ensure there is no cross-contamination . Vegetables are chlorinated before they enter the kitchen area," he said.
